Serving around 4000 smallholder farms, Shembati Washing Station takes every care to help farmers produce the best quality coffee they can - a job made easier by the region’s cooler climate, which is perfect for coffee production.

Once the cherries are received at the plant, Shembati’s team immediately get to work, sorting out the ripest cherries by hand and with the help of flotation tanks. To control the quality, everything is kept separate according to harvest day and the area they are grown in. The cherries then undergo a washed process which involves double fermentation: first a dry fermentation, before the mucilage is washed off and the coffee is submerged for the second round of fermentation. Finally, after being washed again, the coffee is dried slowly on raised beds. This long process not only evens out the moisture content but also gives extra control over the entire process. The end result is a well-processed and delicious coffee that is sure to have you coming back for more.
