In 2006, Diego Lopez, an agricultural engineer acquired his farm in Finca San Francisco. Since then, he has become an expert in the Caturra varietal. To get the most out of his Caturra, Diego uses a red honey process. After picking the outer skin of the cherry is removed (depulped), however, the mucilage (sweet, sticky fleshy layer) is left in place while the coffee dries over 15 days to maximise sweetness and body. Diego, like all Colombian producers we work with, is a member of the National Federation of Coffee Growers (FNC). The FNC works with its members in disease prevention, soil management, water treatment, and environmental sustainability. This sweet, complex, full-bodied coffee ticks all the boxes for our filter program.
