Processing & fermentation - Warm anaerobic Natural process with a 5 day extended fermentation. The fermentation takes place in tanks that are exposed to some sunlight increasing the temperature to between 25C and 30C

Impact - Volcan Azul owns the surrounding land which is preserved rainforest to promote biodiversity at the farm. They also have another area covered in rainforest in the Osa Peninsula that holds 2.5% of the world's total biodiversity.

Brew Guide -  19.5g//94.5C//45g//21 - (Based on commercial equipment. Domestic grinders will require a longer extraction time within 30s)

Year on year we are more than proud to showcase the excellent work that Alejo at Volcan Azul produces. Every coffee is meticulously managed from seed to processing. Coffee cherries are diligently measured for sugar content (brix) and only picked once the target brix level is reached indicating full maturation of the coffee. Part of a larger area of land that includes preserved rainforest, they are very passionate about having a positive impact on the environment at Volcan Azul. They’ve also secured an area of rainforest in the Osa peninsula known for holding 2.5% of the earth's biodiversity. This guarantees the protection of this area and safety of the unique ecology in Costa Rica. 

Processed as a Natural this lot is given an extra fermentation time in the fermentation tanks. The difference with this particular “warm anaerobic” fermentation is that the tanks are exposed to sunlight to allow temperatures of up to 30C. After measuring the coffee diligently over 5 days to maintain temperature and make sure the pH and brix content remain within range.

Impact -These producers help out the surrounding communities by sharing the knowledge they have and helping at the processing stage to create consistently higher quality coffee across the board. 

Brew Guide -19.5g//93C//48g//22s - (Based on commercial equipment. Domestic grinders will require a longer extraction time within 30s) We think this recipe tastes best with 10 - 15ml of hot water added to the espresso

“The Garden of Eden” is as idyllic as it sounds!

Owned by brothers Felipe and Carlos Arcila, they lead the industry in coffee processing innovation. This particular coffee is a product of their willingness to experiment with different varieties and processing methods to push the boundaries of flavour profiles and quality.

Part of a strong coffee family, Felipe and Carlos grew up on coffee farms with their father and grandfather, laying the foundations of growing quality coffee from a young age. This particular lot is a honey passionfruit process. This process involves adding wine yeast and passionfruit pulp during the fermentation stage. Doing this encourages particular conditions to create the unique coffee that tastes amazing. The coffee is fermented during a 48 hour and 23c dry anaerobic fermentation; this is when the passionfruit pulp and wine yeast are added in.

We really love what these guys are doing with coffee. Being able to create high quality coffees with very distinct flavours is exactly what Expedition is all about.

Processing & fermentation - Washed with a dry fermentation. Fermentation time for this coffee ranges between 19 and 22 hours in whole cherries and then the cherry skin is taken out to start the second fermentation step in parchment and mucilage and lasts for 35 hours.

Impact - 20% of farm area devoted to forest and animal reserve. Reducing air pollution with natural combustion fuels. Limiting the amount of water waste through processes such as dry fermentation.

We love this coffee on the hotter side! Also lends itself to a slightly lower dose.

This is the second time we have been able to share this coffee with you. This lot called Las Margaritas is a washed processed Geisha. Think super clean, complex fruits and balanced acidity. Geisha is a very high-quality variety of coffee that yields less fruit than more traditional coffee trees. It requires astute care and a distinct environment to flourish.

At Las Esperanza there is no lack of attention to detail and care given for such a special coffee to flourish. It starts with respect for the surrounding environment where more than 20% is devoted to a floral and fauna reserve to promote biodiversity. It continues with efforts to reduce water waste, which is a common problem with coffee farms. Using dry fermentation processes and utilising modern technologies they reduce the use of their most precious natural resource, water. And no less important is the push to decrease chemical fuels (diesel) and combustion fuels (wood, coal) that pollute the air. This is even more important in the immediate environment of where the coffee dries.

Impact - Housing is provided for employees along with a school for the kids. Meals are also provided for the children. Lasmastus estates has a dedication to the environment, understanding that conserving the environment is only of benefit to coffee growing and quality.

This exceptional coffee from Wilford Lamastus and his son Wilford Jr. is from an award winning part of their coffee estates. This particular lot “Torre” from Elida Estate is one of the best coffees we think we’ve had on any of our coffee programs.

Elida Estate is located on Baru Volcano, Panama in the idyllic town of Boquete. One of the highest volcanoes in Central America along with hosting a protected ecological reserve, it has the perfect conditions to produce exceptional coffee. These conditions provide a unique microclimate and a biodiversity not found in any other place. The interesting characteristic about the weather is that during the dry season a fog engulfs the farm for the first half of the day helping to keep the temperatures low and extends the development time of the coffee cherry to help produce this complex and intense coffee.

We are more than proud to be able to share this coffee with you having worked with the Lamastus’ in the past and experiencing their good work first hand. Make sure you get to enjoy this coffee before the P&R staff drink it all up!

Processing & fermentation - Carbonic Maceration. Coffee cherries are placed in sealed tanks and filled with CO2 removing oxygen. The temperature and humidity are controlled for a consistent result. Moderately extended fermentation.

Impact - Coffees grow in small farmers backyards, known as “Garden coffee”, purchasing from these local farmers helps to stimulate the local economy and helps employ casual staff all year round.

Tucked away deep in the Ethiopian mountains, Uraga Omoro washing station hides creating some mind blowing coffees.

The roads in and out of this remote area are quite bumpy and challenging which just adds to the expedition this coffee has to go through. This lot is processed as a Natural but put through a fermentation stage that is called “Carbonic Maceration” (CM). This type of fermentation occurs in a closed, oxygen-free environment generally in stainless steel tanks. The tanks are pumped with CO2 and the temperature and humidity are controlled to provide the perfect environment for the intended profile of this lot. The timing of this moderately extended fermentation results in a spectacular balance of all the things you want in a “CM” highlighting fruit and promoting cleanliness of flavour. “Indigo” is the description of the profile, think deep flavours with purple tones.

We find this lot has tonnes of character and amazing fruit notes that work perfectly with the added intensity and juiciness of the extended fermentation. A well rounded “CM” and the perfect addition to the program for this Ethiopian Expedition.

This lot is processed as a Natural. Only being exposed to the natural fermentation that happens during the drying process on the raised beds in a moderately thick layer to avoid over or under fermentation. This coffee was managed on a daily basis and stirred frequently throughout the drying process to promote consistency. In total to achieve the required results this coffee took 16 days to reach the target moisture level.
